Canelones are the Christmas-season pasta of Catalonia and much of Spain, traditionally served on December 26 (Sant Esteve) to use the meats left from the Christmas Day feast. A tray of meat-filled pasta tubes under a creamy béchamel and a golden cheese crust is the dish most families expect on that table.
The Spanish reference recipes we checked use a mix of ground beef, pork and chicken for the filling (about 400 g, 200 g and 150 g), about 400 ml of béchamel for 12 tubes, and 180–190°C in the oven with Parmesan or grated cheese on top. This version follows those proportions; the filling and béchamel can be made two days ahead, so assembly on the day is quick.
Ingredients

- For the filling
- 2 tbsp olive oil
- 1 large onion, finely chopped
- 2 garlic cloves, minced
- 14 oz ground beef (400 g)
- 7 oz ground pork (200 g)
- 5 oz ground chicken breast (150 g)
- ½ cup dry white wine (120 ml)
- ½ cup tomato sauce (120 ml)
- 1 tsp fine salt, plus more to taste
- ½ tsp black pepper and a pinch of nutmeg
- For the béchamel
- 3 tbsp butter (40 g)
- ⅓ cup all-purpose flour (40 g)
- 2 cups whole milk, warm (475 ml)
- To assemble
- 12 cannelloni tubes (about 4 inches long)
- ⅓ cup grated Parmesan (30 g)
- 1 tbsp butter, in small pieces, optional
Instructions
- Heat the oil in a wide pan over medium heat. Cook the onion 8 minutes until soft and golden, add the garlic for 1 minute.
- Raise the heat, add the three meats and cook 8–10 minutes, breaking them up, until browned and no pink remains. Add the wine and cook 3 minutes until it evaporates.
- Stir in the tomato sauce, salt, pepper and nutmeg and simmer 25–30 minutes until thick. Let cool, then blend roughly or chop finely for a smooth filling.
- Make the béchamel: melt the butter, add the flour and cook 2 minutes, whisk in the warm milk gradually, and cook 8–10 minutes, stirring, until it coats the back of a spoon. Season with salt and nutmeg.
- Boil the cannelloni tubes in salted water as the package says, usually 8–10 minutes. Drain and lay them out on a clean towel. (If using no-boil tubes, follow the package.)
- Heat the oven to 375°F (190°C). Spread a thin layer of béchamel in a baking dish. Fill each tube with the cooled filling and arrange them seam-side down in a single layer.
- Cover with the remaining béchamel, sprinkle with Parmesan and dot with butter. Bake 20–25 minutes until bubbling and golden; broil 2–3 minutes at the end for a deeper crust. Rest 5 minutes before serving.
Tips for the best result
- 1Let the filling cool before filling the tubes: warm filling splits fragile pasta and is hard to handle.
- 2Use a piping bag or a zip-top bag with the corner cut to fill the tubes quickly.
- 3Make the béchamel slightly thinner than you think: it thickens in the oven and as it cools.
- 4You can assemble the dish a day ahead, cover it and refrigerate; bake from cold, adding 10 minutes.
Storage
Refrigerate leftovers in the baking dish, covered, for up to 3 days and reheat at 350°F (175°C) for 20 minutes. Assembled, unbaked canelones freeze for up to 3 months; thaw overnight in the fridge before baking.
Frequently asked questions
Why are canelones eaten at Christmas in Spain?
In Catalonia they are the classic Sant Esteve (December 26) dish, made to use up the meats left from the Christmas meal.
Can I use fresh pasta sheets instead of tubes?
Yes. Cut fresh lasagna sheets into 4-inch squares, blanch them 1 minute, fill and roll them.
Can I make the filling with leftover roast meat?
Yes. Finely chop or process about 1 lb of leftover roast chicken, pork or beef, mix it with the sautéed onion and tomato sauce, and fill as above.
