Chicken soup is one of the most searched recipes on Google whenever the weather turns cold or flu season arrives. It is comfort in a bowl: a clear, savoury broth, soft vegetables, tender chicken and plenty of noodles.
This version tastes slow-cooked but takes under an hour. The chicken poaches whole in the broth, which keeps it juicy and flavours the soup at the same time. A squeeze of lemon at the end brightens everything.

- 1 tbsp olive oil
- 1 tbsp butter
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 8 cups low-sodium chicken broth
- 1 ½ lb boneless, skinless chicken thighs or breasts
- 1 tsp dried thyme
- 1 bay leaf
- 1 tsp salt
- ½ tsp black pepper
- 6 oz wide egg noodles
- 2 tbsp chopped fresh parsley
- 1 tbsp lemon juice
Instructions
- Heat the oil and butter in a large pot over medium heat. Add the onion, carrots and celery and cook for 6–8 minutes, until softened.
- Add the garlic and cook for 1 minute.
- Pour in the broth and add the chicken, thyme, bay leaf, salt and pepper. Bring to a boil, then cover and simmer gently for 20–25 minutes, until the chicken is cooked through (165°F / 74°C).
- Lift out the chicken, shred it with two forks and set aside.
- Bring the soup back to a boil, add the noodles and cook according to the package, usually 6–8 minutes.
- Return the chicken to the pot, stir in the parsley and lemon juice, remove the bay leaf and adjust the seasoning.
Tips for the best result
- 1Chicken thighs stay juicier than breasts and give the broth more flavour.
- 2If you plan to have leftovers, cook the noodles separately and add them to each bowl — they keep soaking up broth in the pot.
- 3A rotisserie chicken is a great shortcut: simmer the vegetables in the broth for 15 minutes, then add the shredded meat with the noodles.
Storage
Refrigerate for up to 4 days. Freeze the soup without the noodles for up to 3 months, then add freshly cooked noodles when reheating.
Frequently asked questions
Can I freeze chicken noodle soup?
Yes, but freeze it without the noodles, which turn mushy. Cook fresh noodles when you reheat it.
Why did my noodles soak up all the broth?
Noodles keep absorbing liquid as they sit. Add more broth when reheating, or store the noodles separately.
Can I use rice instead of noodles?
Yes. Add ¾ cup of uncooked rice and simmer for 15–18 minutes, until tender.
